Colombia (Cauca) Suarez,Qulichao
This Cauca lot is a blend from farms in two municipalities along the northern part of the Western Cordillera (facing East) called Suarez and Santander de Qulichao. This area has an altitude between 1400 and 1800 meters, and it is the place where the Cauca River originates. The varietals under cultivation here are: 50% Typica, 30% Caturra, and 20% Variedad Colombia.
In most areas, the coffee is planted under shade canopies. Each individual farmer undertakes their own processing, done using the traditional fully-washed method, and their own drying, which takes place in the enclosed solar-dryers to promote evenness and uniformity of the beans.
In the cup: Super sweet/savory, with herb notes. Finishing very clean and crisp, the cooler this coffee is, the sweeter the cup. Soft body and clear acidity.
