This coffee comes from a tiny producer group situated in the municipality of Condega, Esteli. The Sabor de Segovia brand is made up of entirely SHG quality Caturra and Bourbon cultivars grown under shade trees at altitudes ranging from 1110 to 1350 meters. The contributing producer co-ops are located in Las Segovias and spread over the municipalities of Estelí, Pueblo Nuevo, Somoto, Quilalí, Jalapa, San Juan del Río Coco, Condega, and Dipilto.
This is a region with a moderate climate which is often semi-humid and tropical during the day and relatively cold at night. The cherry picking is done between December and March. Most of the producers do the depulping on their own farms before natural fermentation for 18 hours, followed by full-washing with fresh, clean water. The parchment is then sun dried on cement patios and wood drying tables before being put into reposo for a minimum of four weeks.
